The best thing you can do when you decide to cook fried chicken is to take your time. Let the chicken sit at room temperature for at least 30 minutes before you start adding the batter. This helps the meat cook quicker and more evenly.
Then, after you dredge the chicken with your concoction of spices and batter, let the chicken rest on a wire rack for 15 minutes before frying. This allows for an extra-crispy crust. Another tip? Wondra flour will help you achieve that extra-crispy crust, too.
Heat the oil to 365 degrees in a cast iron skillet, add the chicken and then maintain the oil at 350 degrees for even cooking throughout.
